A classic dish that is cheap and simple but can be paired with any number of things: Black bean burritos, with coconut rice and whole fish, on their own, with lots of sour cream and guacamole and pico de gallo, over ice cream. Prep all the ingredients as described above, then sautee the onion, carrot, and garlic until tender. Add the rest of the ingredients with water, cover, and cook for an hour or so, adding more water as necessary. Let the water boil off and char the beans slightly at the end. Not too hard, right?
