Well here it is folks, a campfire delight. For the record, this chili recipe is not creative, not original, not haute cuisine, it is just damn good. Like beer. It should be noted that any canned ingredient can be substituted for fresh for the industrious chef, arguable result. Saute onions and garlic, celery and carrots if you use them, until soft. Add meat and cook until brown, adding salt and pepper, chili powder, crushed red pepper and any other spices you like. Add tomatoes, beans, chocolate, beer, and jalapeņos. You can adjust the spiciness with chocolate and beer. Let simmer uncovered to let the goodness thicken. If it gets too thick, add beer to thin. Let simmer as long as you like or until the natives grow restless, or too much beer is consumed on an empty stomach. Can serve with coconut rice.
