We love the classic meatballs and sauce, most often just by itself but also with pasta. We have been craving them for some time so we decided to do it ourselves. In a small bowl, mix the ground meat, breadcrumbs, egg, and a little water. Then add the cheese, about 1/8 cup of the onion and carrot, some garlic, some basil and oregano. Remember to keep the majority of these for the sauce. You can also add pinenuts and rasins if you are feeling it, they're good! The goal, of course, is for the mixture to form sphere, you can adjust the gooeyness through water or another egg and breadcrumbs. Drop these into a large pan of hot oil searing them on all side. They need to be crispy on the outside or they fall apart in the sauce. When they are done remove them and set them aside.
in the same pan add some oil if needed, throw in the garlic, onions, and carrots. Sautee until tender and scrape the bottom of the pan to get up the good meatball stuff. Why carrots, you ask? Well carrots are high in suger which mellows the acidity of the tomatoes, you could also you straight sugar if carrots bother you. Next, add the spicy pepper, tomatoes, basil and oregano. Cook all these down until the tomatoes lose any shape like quality. Return the meatballs and cook for another half an hour. Yummy!
