In Taganga it is hard to throw a rock and not hit a stray dog or a fried fish. Frying things is the primary method of cooking in most poorer countries, all you need is oil, a pan, and heat. That being said fried things are good.
Select a whole fish that you like, in the States the classics tend to be of the seabass family (Dorata, Bronzino, Porgy etc.), down here any fish will do. If it isn't cleaned than clean it by sliting up it's stomach and pulling all the things that you don't want to eat out. In their place add lime and herbs, pin the sides closed with a wooden skewer. Coat in corn meal and add to the hot oil. Note: olive oil is great, but it doesn't get hot enough for most frying goals, so use veggie or canola. It will get very dark brown before it is done. Time depends on the size of the fish. To grill don't bread, simply coat in olive oil, and throw on the grill. Expect about eight minutes on each side, but again it depends.
To fillet a cooked fish, ask someone who knows or look it up online. It is very difficult to discribe in writing. I know I just tried.
